Moment and highlight are different things (but something can be both).
Silva subbing Chael after getting beat up for 5 rounds was a moment but not necessarily a highlight.
DJ’s suplex armbar was a highlight but not necessarily a moment.
Holm’s KO of Rousey was both.
My top moments:
Werdum catching Fedor (biggest holy shit moment I recall)
Couture dropping Sylvia early in their fight (remember, he was expected to get destroyed)
Strickland doing the same to Izzy
And I always love the moment when someone unexpected FINALLY wins the title (Lawler, Glover, Oliveira, etc.)

Late 1980s: I was with a group training/partying in Brazil and we met some locals that invited us to their gym.
The next day a couple of us went and rolled with them. We got manhandled, but went back the rest of the week to train. I had never heard of jujitsu and it was eye opening.
I told people in the states about the Gracie family but most didn’t believe us. Then in 1993 UFC came to the USA. I made a killing betting on Royce.
So, the most impactful fight to me was Kimo vs Royce as no one had been able to do anything to Royce at that time. I watched it live and haven’t seen it since so I am sure my memory is off.
But as someone who was in the fight business when the UFC started that had the most impact/validation.
OP @sean - Good topic and thanks for the trip down memory lane. RIP to the group I was traveling with back then. Call an old friend or family members and tell them you love them. Life changes quickly.

View from my hotel room is honestly up there. Those that know, know. That was an amazing moment. The og was brought together. Anyone watching that pov knew what that fucking Barkley head meant. Ahahahahh… so good Hocky, so good. Bravo.
I would say Fedor vs Arlovski. Fedor’s popularity state side and with the casuals hit in all time high this fight.
I remember getting my bro and others into Fedor prior to the Sylvia fight. Seeing a bunch of WWE guys and Zab Judah etc at that fight was a start of his popularity.
A lot of casuals I knew tuned in for the Arlovski fight and my bro had a house party… I remember a few seconds before the KO he turned to me and said it’s not looking good lol.
